Recipes for Poets: Ginger and Sweet Potato Soup

Michael Gushue started a recipe exchange among poets. I sent my recipe for ginger-sweet potato soup to Nick Carbo. I thought you might like it, too. Cook a quick dinner and have more time to write!

2 sweet potatoes, peeled and chopped
1 tbsp ginger powder or 1/2 tbsp fresh
4 cups water
1 onion, chopped
2 tbsp oil
several sprinkles garlic powder

Saute onion in the oil until soft. Add garlic powder. Saute another few minutes.

Add the rest of the ingredients. Let water come to a boil. Then, cover and turn down to a simmer. Simmer until potatoes are soft. Blend/puree.

Deborah: *Great* recipe! I wish I could take originating credit for this gastronomic Ponzi scheme, but I merely passed it on from the fantabulous Kim Roberts, who deserves the full glory.
